The fresh salmon comes up to three times a week by plane from Norway and then gets prepared on the island. Linas family originate from Paris and for three generations have been smoking fish as their business. Many recipes and the homemade way of preparation have been passed on from generation to generation.

The preparation process to get the fish into a perfectly smoked condition lasts up to 48 hours.
